El chicharrón de cerdo es uno de nuestros placeres culposos nacionales; pocos pueden resistirse a él. Este el tipo de comida que disfrutamos por sí sola, pero que también incorporamos a otros platos favoritos: desde un plato de fritura hasta un sabroso locrio.

Las palabras "placer culposo" siempre me vienen a la mente cuando pienso en el chicharrón de cerdo. Placer culposo (guilty pleasure, traducción mía), no existe en español, y describe las cosas que nos gustan a sabiendas de que no son necesariamente lo mejor para nuestro bienestar, o de las que nos avergonzamos un poco.
Estoy segura de que alguien más inteligente que yo puede escribir todo un tratado sobre las implicaciones lingüísticas, sociológicas o culturales de esto, pero yo prefiero escribir sobre comida: así que déjame que te cuente no sólo cómo se hace, sino todas las formas en que podemos disfrutar el rico chicharrón de cerdo dominicano.
¿Qué es chicharrón?
El chicharrón clásico es pedazos de piel de cerdo frita, generalmente panza de cerdo, que se sazona y se fríe tradicionalmente en manteca de cerdo (su propia grasa que se desprende durante la cocción).
El chicharrón es un plato originario de España traído a América Latina (junto con la carne de cerdo) y a otras antiguas colonias (como Filipinas). Se puede encontrar prácticamente en todo el continente, con toques diferentes en cada país o región, desde México hasta Colombia y Perú.
Otros platos fritos o tostados han tomado prestado su nombre, como el Chicharrón de leche (la parte que se pega al fondo de la olla cuando se hace el Dulce de leche), y el Chicharrón de pollo (trozos crujientes de pollo frito).

No sólo comemos el chicharrón por sí solo como comida, cena, como merienda o como parte de un plato de fritura dominicana. Chicharrón Dominicano
En la República Dominicana puedes encontrar chicharrón de cerdo en prácticamente cada pueblo, pero es Villa Mella la que se considera la capital dominicana del chicharrón. Para quienes no han oído de este lugar, Villa Mella no es solo famoso por sus crujientes chicharrones de puerco, sino también por su cultura sincrética y música. Con vasta influencia de nuestros antepasados africanos, estos han sido declarados Patrimonio Cultural de la Humanidad.
La popularidad del cerdo como carne no es de sorprenderse, los cerdos eran populares entre las clases más humildes, quienes los criaban para suplementar sus ingresos y alimentación. Los cerdos eran alimentados con las sobras caseras y requieren poco espacio y cuidado, además de que todo se aprovechaba cuando se les sacrificaba.
Consejos útiles
Es muy importante evitar las salpicaduras de aceite caliente al freír los chicharrones. Cuando se están friendo, el aceite se vuelve bastante "explosivo", así que ten mucho cuidado al destapar la olla en la que los fríes. Es preferible usar un caldero u olla profunda que una sartén.
Utiliza un protector contra salpicaduras (enlace afiliado) o una tapa de cristal (con un agujero para que salga el vapor) para poder ver cómo va todo sin destapar. Retira del fuego antes de quitar la tapa para que el aceite se enfríe un poco una vez termines de freír.
Algunas personas gustan añadir unos dientes de ajo y/o dos mitades de cebolla roja al agua de cocción. Puedes probarlo si quieres.
Cómo servir
La opción más fácil y popular para servir el chicharrón es un plato lleno de Tostones crujientes recién fritos y unas rodajas o cuñas de limón para rociar los chicharrones. Algunos ofrecen un poco de salsa picante como acompañamiento, así que pruébalo si te apetece.
También puedes servirlos con Batata frita, Yuca frita, Guineos verdes en escabeche o Yuca al mojo de ajo.

Ingredientes
- 2 libra carne de cerdo [0.9 kg] para chicharrón, panza
- ½ galón agua [2 lt]
- 1 ½ cucharaditas sal
- 1 cucharadita orégano
- 1 cucharadita pimienta
- ¼ taza jugo de naranja agria (o limón)
- 1 taza aceite de freír
- 6 rajas de limón para servir
Instrucciones
En un caldero de fondo grueso mezcla la carne de cerdo, agua, sal, orégano, pimienta y naranja agria.
Cuece destapado a fuego medio hasta que todo el líquido se haya evaporado (queda algo de la grasa del cerdo).

Retira del fuego, pon sobre una toalla de papel y deja enfriar un poco.
Corta en trocitos de 2 pulgada [5 cm]. Sirve con limón según sugiero más arriba.

Deseo repetir la importancia de evitar salpicaduras de aceite. Ten mucho cuidado al destapar el caldero donde frías el chicharrón ya que el aceite puede saltar bastante lejos.
Si tienes un caldero con una rejilla para salpicaduras (enlace afiliado a tienda), o tapa de vidrio con escape para el vapor es mucho mejor, así puedes ver como va sin destapar hasta el final. Retira el caldero del fuego y deja enfriar un poco antes de abrir para dejar que el aceite se enfríe y deje de chisporrotear.
